Hearty Bean Soup

Now that the temperature is dropping it is time for something warm and hearty. This soup, which comes from is easy to make and full of flavour.

As this recipe points out you don’t have to sauté food in oil. Most of the time I simply sauté onions, garlic and other vegetables in water, broth or wine. I find that in dishes like chili, pasta sauce or soup I can’t tell the difference, so I save the oil for somewhere else on the menu.

Because it only takes about 10 minutes to prepare and maybe 30 – 40 minutes to cook, dinner can be on the table in under an hour.

Kombu is likely available in a health food store in your area and it does make the beans easier to digest. But if you can’t find it just skip it.
